Established in 2003, the Consortium is actively involved in the protection and promotion of Italian Cacciatore Salami DOP.
Members use the same easily and immediately identifiable consortium label to facilitate recognition of product by consumers.

The Consortium has the authority to take action along the entire Italian Salami Cacciatore DOP production chain, also with regard to non-consortium members. It has monitoring powers, which include the use of inspectors to safeguard against violations, imitations, acts of piracy and counterfeiting in Italy and abroad.
It promotes programmes to improve quality in terms of health and safety, and the chemical, physical, sensory and nutritional characteristics of the protected product.
With recognition of the Consortium by the Ministry of Agricultural, Food and Forestry Policies in 2005, the body became officially accredited to carry out the tasks of information, protection and promotion of Italian Cacciatore Salami DOP.
